Vun come “uno”, in dialetto milanese. E un “numero uno” è Andrea Aprea, chef pluripremiato dalle guide per il ristorante gastronomico Vun Andrea Aprea, nel 5 stelle lusso Park Hyatt Hotel, con affaccio sulla Galleria, il “salotto di Milano”. La location è prestigiosa e cosmopolita, l’atmosfera chic, gli arredi, le luci e tutto l’insieme sono pensati per offrire il massimo comfort, con un servizio che ti coccola e una cucina italiana che, come dichiara lo chef, è “contemporanea e guarda al futuro, senza mai dimenticare le origini” (comprese quelle napoletane di Aprea, che fa buon uso delle eccellenze del suo territorio natale). La presentazione dei piatti è elegante e scenografica, in molti casi fa scattare “l’effetto wow”, un esempio per tutti, il dessert Intensità di limone.
Due i menu degustazione: il primo è Percorsi partenopei (a 140 euro), con piatti iconici dello chef come la strepitosa Caprese… Dolce salato, una elegante sfera di isomalto che contiene una mousse di mozzarella di bufala su salsa di pomodoro o la Calamarata Gerardo di Nola, genovese di coniglio, provolone del monaco, scarola, olive nere, chiudendo con Intensità di limone e Roccoccò. Il secondo percorso degustazione è Viaggiando tra Nord e Sud (a 165 euro), più ampio, con piatti magistrali come la Seppia alla Diavola o Maiale 100 ore. Variegato il menu alla carta, con proposte equamente divise fra carne e pesce, ad esempio Piccione, tarassaco, mela annurca e anice o il San Pietro alla milanese con canocchie, puntarelle e alici di Cetara. Ampia carta dei vini, che tocca tutte le regioni italiane e la Francia, bollicine comprese.

Amazingly inventive yet absolutely delicious, Andrea is an artist in the kitchen and on the plate. Kudos to the sommelier as well, the wine pairings for our simple a la carte meal were spot on and very true to their roots in Lombardy.

Non attentive service. Food flavors too strong. Pairing didn't work. Staff stopped explaining the food Midway. Too crowded and too noisy. Did not enjoy

Everything was perfect!
Portions are small and the food is pretty much a hit or miss. Some courses were exceptional but others were mediocre in terms of taste. Presentation was, however, beautiful. Most staff were quite nice but one guy was extremely unfriendly. Service was so slow, they kept refilling the bread basket to keep us occupied. For the price, I would recommend you head elsewhere.
Absolutely enjoyed my time and dinner at VUN Andrea Aprea. The dishes were creative, stunning 8n presentation and exquisite in taste. The servers were friendly and attentive. The ambience was perfect for relaxed fine dining. I will definitely come back when I am in Milan next time.
