Lo primero que sorprende al entrar en Gioia es su decidida apuesta por un ambiente italiano romántico y clásico. A ello contribuyen los muebles vintage que Davide Bonato y su esposa, Daniela Rosso, han traído desde su pueblo, en el Piamonte. En la mesa, todo sigue siendo cien por cien transalpino, pero pasado por el prisma de la modernidad.

La pasta de Bonato es de primera división, quizá la mejor que se puede disfrutar en Madrid ahora mismo. Los tallarines se hacen en el propio restaurante y se acompañan de la mejor salsa posible, yema de huevo, y trufa rallada. Un pequeño hit del chef es el uovo mórbido, su particular homenaje a los huevos rotos españoles, que llega servido dentro de una costra de arroz venere negro y acompañado de un portentoso parmentier de patata. Otro arroz autóctono de Italia es el ermes rojo, que sirve de base a un orto (huerto) del que surgen verduritas de temporada. Bonato únicamente abandona Italia para la carne, con un lomo alto que trae de Galicia. Aunque es una parada breve para volver enseguida con tiramisús y pana cottas más azurri que Eros Ramazotti. Todo un viaje a Italia sin salir de Chueca.

    This restaurant has excellent food and service. The décoré was very nice. The Italian food was the best we had in Spain. The eggplant Parmesan was really good and different from traditional one. The burratta was also excellent. The pasta dishes the taliatelle and pasta carbonara was excellent! I highly recommend it.

    Excellent Italian food with a creative twist! Black truffles are added to some dishes, which really enhance the flavor of the food. We had the special menu, which was fabulous. The tagliolini with truffles and cheese was the star dish for us, as well as the poached egg with truffles. The tiramisu was excellent. Highly recommended!
