Cocina de autor y de calidad de la mano de una chef todoterreno, Begoña Fraire (ex modelo que tras formarse en Le Cordon Bleu, trabajó en el Celler de Can Roca y abrió Seis Ocho en Madrid). En Étimo, la extremeña propone una carta por estación, según productos de temporada, que se aleja de lo habitual: cuatro apartados diferentes y una propuesta divertida en la que el comensal elige un plato de cada uno de los apartados y se confecciona así su propio menú. Brillan las alcachofas con níscalos y queso Mahón, el huevo ecológico a baja temperatura con sopa de ajo, la patata ratte y trompeta de la muerte o el queso de cabra y oveja, con higo, mango y macadamia. Sin olvidar la impecable la labor del sumiller, David Expósito así que déjate llevar por sus recomendaciones.


Si amas el chocolate los Petit fours son tu postre: el de 85% de cacao para los más chocolateros, el de 70% (con sal), el de 55% y el de chocolate con leche y avellana.

    definitely this restaurant is world class. the service is excellent, the knowledge of the somelier in the selection and wines is super good. The service and attention is excellent. But the food is Super Good, balanced and of extraordinary quality

    We were really excited and wanted to start our trip to Madrid with a little highlight but were sadly disappointed on many levels. Staff was friendly but due to some internal problems not attentive,always in a kind of rush and we had to wait and ask multiple times for additional water, wine or actually anything we needed. Even though there weren’t too many guests. The surprise menu was quite interesting but taste wise only the starter and desert were convincing. They were really sorry as they were aware of all this themselves however for us it was a poor start. The location and space in between the tables is really nice. Wouldn’t necessarily recommend the place

    very nice food, very friendly kitchen staff - unfortunately welcome and service was not was we expected (when we entered the restaurant the waiter noticed us, but instead of saying "one moment" or something similar he just turned around and let us wait) the lady for wine recommendations was so quick to turn around once we found a wine that we didnt have the chance to ask more questions...but overall nice experience, very good food but service should be improved.

    We arrived early but they graciously accommodated us. My husband and myself really enjoyed our 6 course tasting menu. There were some really scrumpious moments. We had just arrived that morning from US so weren't too interested in lounging. Our server moved things along at just the right pace. After our passion fruit creme brulee ( super yummy) we ambled back to our hotel comfortable, happy, relaxed and well feed! Perfect.

    The quality of the food was good. However, some dishes were just not my taste. But that is off course personal. It would have been nicer if they had more alternatives available, Atmosphere was a bit cold.

    Etimo is a lovely restaurant in the Salamanca area of Madrid. The staff were so welcoming and the food was great. Each course was a culinary delight and at the end of the evening the chef came around and spoke to everyone. It is definitely somewhere we would recommend.

    Both food and wine were great. the delivery people and the sommelier were also very good. I had to wait for a little time for wine because there was only one sommelier for whole restaurant. Still, it was a perfect dinner, including a tour of the kitchen. Thank you very much. We will come back again next Madrid.

    What an amazing restaurant! We visited Étimo for the first time yesterday and I have to say it is definitely one of the best in Madrid. The Chef is very kind. Her vision is spot on!!! The flavors were remarkable!!!! We will definitely come back on our next visit to Madrid.
