Es difícil no enamorarse de uno de los lemas de esta cervecería madrileña: “la cerveza es libertad”. Con esta máxima, que quien más quien menos ha sentido en sus carnes alguna vez en la vida, presentan una carta de cervezas interminable, repleta de referencias sorprendentes. Porque antes de entrar a El Sainete conviene tener claro que en su carta no tienen vino. Nada. Solo cerveza y agua, y muchas ganas de hacer pedagogía sobre un brebaje que ha decidido al fin reivindicar el lugar que se merece.

El chef Fran Vicente, ex concursante de Top Chef y curtido en los fogones de Coque, es el encargado de elaborar una carta pensada para maridar con las mejores cervezas del mercado internacional. Y lo hace sin temor a nada ni a nadie, pero con mucho respeto. Espumas, gelatinas, ingredientes de aquí y de allá y mucho rock’n roll es lo que vamos a encontrar en una carta que incluye desde un bao hasta unos callos, pasando por un ceviche o una picanha. Es perfecta para compartir, y está pensada hasta el milímetro para maridar con un surtido de cervezas que se encuentra entre los más completos de Madrid. Nada menos que unas 150 referencias en botella y 22 grifos forman la oferta de un establecimiento que presume de tener la cerveza perfecta incluso para todos aquellos a quienes no les gusta.


La súper gilda de bonito en escabeche merece por sí sola una visita al local.

    The food was excellent and the portions are generous. We ordered 4 dishes to share and it was too much. (We still ate it all). My husband had the roasted pork and I had the chicken ravioli which came decomposed. The waiter finished the dish at the table including shaving a truffle. They have a unique beer selection. The wait staff is attentive. Great atmosphere, too. We will definitely be back.

    NEW LOCATION SAME GREAT SERVICE. This location is even better than the last. Same awesome menu but new as of a two weeks ago decor. They picked up and moved the restaurant but brought absolutely everything great with them. Servers, food, cooks, and the beermouths! You can not go wrong eating here. The food is served so you can share with one other person so order away. Spectacular service and really great beer and food. Make a reservation and do it early . As soon as the patrons find this place you'll only eat here with reservations. MUST TRY!

    Excellent excellent restaurant! Two floors- bar upstairs with sit down service downstairs. The front door is a bit hard to find as it’s not off the obvious Main Street. Smart casual for the restaurant but jeans are fine. The staff is very attentive and explain both the food and custom beers in great detail. The menu is really played for sharing 2 people comfortably share one plate and a dinner meal was three plates and neither of us left hungry. The food is all well presented and tastes great—- this is no “bar food”. Recommend the beer flight of 6 beers and we let the staff pick. Finally if you don’t get anything else get the beermouth (sp?) it’s a cocktail to start. Honestly it’s the best handcrafted cocktail I’ve had in spain in almost a year here. Always make a reservation because the place will be packed and I’m telling you this place is worth the visit. Great staff and great food. ( we are wine drinkers....but we come back here).

    Excellent modern-ish Spanish cuisine near the Palacio Real. The setting is a renovated street level space, keeping much of the original stone walls. The service is friendly and helpful. But the highlight is the delicious food, some seasonal, some regulars on the menu. Tip. Try the seasonal stuff. The ibérico pork (not ham) was flavorful and full-bodied, the bean and duck cassoulet-style dish was unctuous. And te standby short rib tacos are a Spanish twist on a Mexican standard. Very good.

    Really nice décor. Menu was well rounded and offered enough choices without being overwhelming. Service was kind and accommodating. I’m not a beer lover and I loved that they paired with my courses. Music was loud enough to hear, but not obnoxious. I really liked the design of the restaurant and hope enough cool people patronizing the restaurant to keep it running smoothly. Delightful discovery!

    Were there for the Madrid Restaurant Week menu. Food quality is correct. Maridaje with the beers is very interesting! We liked the food and the service a lot, the only negative point is that we still were hungry after the menu. This is maybe because it was a special offer.
