Para descubrir a qué sabe la cocina del restaurante de Marcos Granda no hace falta salir de Madrid. Al entrar, una gran bodega vista despierta nuestra curiosidad y nos da una pista de la importancia que tiene el vino en esta casa. Aunque se puede pedir a la carta, la opción más inteligente es decantarse por su menú degustación que incluye, entre otros, platos como un desayuno de caza (caldo de ave de caza, espuma de tomillo y encima un churro con trufa), oreja crujiente, callos de bacalao a la madrileña, arroz de pichón o una merluza al pil pil. Para acabar, natilla madrileña, un postre que te quedará grabado a fuego en la memoria.


Si te gusta el vino da luz verde al sumiller Xabier Iturralde y prepárate para disfrutar de su monumental maridaje.

    The service was well-meaning but inept. I had to ask for water, utensils, a copy of the menu on which to make notes, and butter… all several times. I think the sommelier had no idea of the meaning of a wine pairing with the tasting menu, as he came back with an offer of a different wine for each of nine or 10 courses. That’s a bit much, I thought. All the wines were good, but I never thought a Rioja paired well with a fish course with a rich cream sauce. The atmosphere was lovely. However the food lacked all elements of flavor, although everything was pretty to look at. Customarily, my experience is that the Spanish, if anything, over salt everything. I have eaten at a number of Michelin-starred restaurants in Spain —all outstanding— and this did not deserve a single star. It was a singular disappointment, and I am really sorry to have to report that.
